AGSEM Sonoran

Limit 5 per order

Our very first crop from the Museum grounds at The Antique Gas and Steam Engine Museum located in Vista, California of Sonoran wheat .

Seed purchased from the very highest quality we could find thanks to @Oatmanfarms who provided a blend of four different years of his organic regenerative Sonoran wheat. Planted in clay (we are right next to the Vista Adobe) this heritage wheat proved its resiliency in “tough” growing conditions alongside rye, wild mustard and the thickest patch of nettle I’ve ever encountered. Growing over 6’ tall in some places and with broad leaves the wheat eventually outcompeted other plants in the area.

It has been a gift to be able to work with this crop that has such historical significance in our country.

ALL of the profits from the wheat will be going back to the museum and the Whole Wheat Guild to help support the cause of uniting farmers, millers and bakers to bring back the Wheat Ecosystem to San Diego.

Welcome to the Wheat Revolution!

Flavor Profile: Sweet, creamy, and buttery with notes of honey and fresh wheat.

Imperial Valley Sonoran Whole Grain Flour — Limited Harvest

White Sonora is one of North America's oldest cultivated wheat varieties, cherished for more than 300 years for its sweet flavor, creamy color, and exceptional versatility in baking. Long before modern commodity wheat dominated the landscape, Sonora wheat helped feed communities throughout the Southwest and shaped the bread, tortilla, and baking traditions of the region.

This particular crop was grown not as a commercial commodity, but primarily as a seed bank for future plantings. As a result, only a very limited quantity of flour is available. Every pound purchased directly supports the expansion of locally adapted heritage grain production and helps establish the foundation for future harvests throughout Southern California.

The wheat was grown organically by farmer Stephen Benson in California's Imperial Valley. Stephen is a diversified grower whose operation includes sugar cane, olive production, and other specialty crops. His willingness to dedicate valuable acreage to heritage wheat seed production represents a significant investment in the future of regional agriculture and local food systems.

For Staff of Life Wheat, this harvest carries special significance. It is the first step toward restoring a regional grain economy—one where farmers, millers, bakers, and consumers are connected through locally grown wheat. The seed from this crop will help expand acreage in the years ahead, creating opportunities for more farmers to participate in rebuilding Southern California's wheat heritage.

Every batch is stone-milled in small lots to preserve the bran, germ, and natural oils of the grain. The result is a flour that captures not only the flavor and nutrition of the wheat, but also the story of a community investing in its agricultural future.
