Imperial Valley Sonoran Whole Grain Flour — Limited Harvest
White Sonora is one of North America's oldest cultivated wheat varieties, cherished for more than 300 years for its sweet flavor, creamy color, and exceptional versatility in baking. This particular crop was grown not as a commercial commodity, but primarily as a seed bank for future plantings. As a result, only a very limited quantity of flour is available. Every pound purchased directly supports the expansion of locally adapted heritage grain production and helps establish the foundation for future harvests throughout Southern California.
The wheat was grown organically by farmer Stephen Benson in California's Imperial Valley. Stephen is a diversified grower whose operation includes sugar cane, olive production, and other specialty crops. His willingness to dedicate valuable acreage to heritage wheat seed production represents a significant investment in the future of regional agriculture and local food systems.
For Staff of Life Wheat, this harvest carries special significance. It is the first step toward restoring a regional grain economy—one where farmers, millers, bakers, and consumers are connected through locally grown wheat.
